We’d had the idea for a while already. Then finally, last tuesday, the first Brussel’s Kitchen roof top terrace drink happened at Henri & Agnes. After picking out flowers and plants in the forest this weekend, a couple or research in various books and a few tests, we prepared tons of delicious treats with wild plants.
Our guest had the occasion to try bear garlic pesto, hazelnut puree, sorrel dip, nettle butter (my favorite), fresh goat cheese with ground ivy, rose meringue, vervain fruit salad, elderberry syrup…All of this happened with a beautiful view of Brussels, with a beautiful changing light as the sun was slowly starting to disappear behind the clouds. It was also the occasion to learn how to make deliciously flower flavored salt.
A big thanks to Dille & Kamille for their pretty aprons offered to our guests, and which Christelle and I wore the entire evening, to Dandoy for their delicious cookies, and to San Pellegrino for their forever presence.
